  • 12 lamb cutlets
  • 1 tsp chilli flakes
  • 3 thyme sprigs, leaves picked
  • 2 tbsp extra virgin olive oil
  • 175g feta, crumbled
  • 235g roasted red peppers from a jar, drained
  • 2 spring onions, finely chopped
  • 2 thyme sprigs, leaves picked
  • 2 garlic cloves very finely chopped
  • 4 tbsp extra virgin olive oil
  • squeeze of lemon juice (optional)


Put the lamb cutlets, thyme, chili flakes, and oil in a bowl. Mix well, then put in the fridge for 30 minutes to 1 hour to marinate.

Cut the peppers into small pieces for the htipiti. Add all the other ingredients to the bowl. Let the flavor soak in for about 15 minutes.

Start by heating up a griddle or frying pan. 

Take the chops out of the marinade when it's really hot. Cook a few at a time for 3 minutes on each side, adding salt and pepper as you go. Serve the chops with the sauce and, if you like, some baby potatoes.
