This simple, delicious, and low-fat five-ingredient recipe is a stripped-down version of kedgeree.
Ingredients
- 2 tbsp curry powder of your choice (we used madras)
- 600ml chicken stock
- 400g skinless smoked haddock
- 300g basmati rice
- 100g frozen peas
Method
Preheat the oven to 180C/160C fan/gas 4. Toast the curry powder for 1 minute over medium heat in a pot that can go in the oven or on the stove. Mix the curry powder into the rice, and then pour the stock on top. Bring to a boil, and then add the haddock. Cover. Cook for 30 minutes in the oven.
Take out of the oven with care. Let it sit for a minute, then stir in the peas while breaking up the haddock and fluffing the rice. Then season to taste and serve.
