 This simple, delicious, and low-fat five-ingredient recipe is a stripped-down version of kedgeree.


  • 2 tbsp curry powder of your choice (we used madras)
  • 600ml chicken stock
  • 400g skinless smoked haddock
  • 300g basmati rice
  • 100g frozen peas


Preheat the oven to 180C/160C fan/gas 4. Toast the curry powder for 1 minute over medium heat in a pot that can go in the oven or on the stove. Mix the curry powder into the rice, and then pour the stock on top. Bring to a boil, and then add the haddock. Cover. Cook for 30 minutes in the oven.

Take out of the oven with care. Let it sit for a minute, then stir in the peas while breaking up the haddock and fluffing the rice. Then season to taste and serve.

Basmati rice is a kind of white rice with long grains. It has a strong smell and a rich taste because the rice grains have enzymes that are there naturally. Most of the time, ghee and spices like more, cloves, black pepper, cardamom pods, and cinnamon sticks are used to cook basmati rice.
