Chicken, lemon & ricotta meatballs with linguine

  • 2 chicken breasts
  • 200g ricotta
  • 2 lemons, zested
  • 150g fresh breadcrumbs
  • 3 tbsp parsley, chopped
  • 100ml milk, plus 2 tbsp
  • 25g plain flour, for dusting
  • 1 medium egg, beaten
  • 300g linguine
  • 1 tbsp olive oil
  • 320g green beans, trimmed and halved

Use a sharp knife to cut the chicken into very small pieces. You can use a food processor, but make sure to pulse it so that it doesn't become a paste. Mix together the lemon zest, half of the ricotta, half of the parsley, and the breadcrumbs. Add the egg, the 2 tablespoons of milk, and a good pinch of seasoning. Mix again.

Sprinkle a little flour on a plate. Wet your hands and take a piece of the meatball mix about the size of a golf ball. Roll it into a ball. Place on the floured plate and keep doing this until all of the dough is gone.

Heat the oil in a heavy-bottomed pan over medium heat. Add the meatballs, making sure they don't touch each other. Cook them for 10 to 15 minutes, turning them so that all sides get browned. Place on a plate.

In the meantime, bring a big pot of salted water to a boil and add the linguine to it. Follow the directions on the package and add the green beans 3 minutes before the end of the cooking time. Drain the pasta, but keep the water. Rinse the linguine and beans under cool water to stop them from cooking any more.

Add the rest of the ricotta, breaking it up as much as you can, to the frying pan. Pour in the 100 ml of milk and 2 tbsp of the pasta water that you saved, then let it cook for a couple of minutes to make it a little thicker. Mix in the pasta, the beans, the rest of the lemon zest, and the parsley. Add the meatballs, season to taste, and serve.
