As a summer side dish, make this big couscous and tomato salad. Zhoug is a spicy, bright green sauce from the Middle East that makes this dish come to life.


  • 4 large vine tomatoes, diced
  • 150g giant couscous or fregola
  • ½ red onion, finely chopped
  • ½ small bunch of coriander, roughly chopped
  • handful of parsley leaves, roughly chopped
  • 2 green chillies, chopped
  • 1 lemon, juiced
  • 1 garlic clove, roughly chopped
  • ½ tsp caster sugar
  • ½ tsp ground cumin
  • 3 tbsp olive oil

Put the tomatoes, onion, and 1/2 teaspoon of sea salt in a large bowl. Toss and set aside.

Cook the couscous in a pot of boiling, salted water for 8–10 minutes, or until tender. Don't overcook it; you want it a little underdone so it can soak up the tomato juices. Then drain it really well. After 10 minutes, toss the pasta with the tomato and onion mixture.

Mix all of the ingredients for the dressing with 1 tablespoon of water and 1/2 teaspoon of sea salt until smooth. Pour some of the sauce over the couscous and put the rest on the side so people can help themselves.
