Grilled courgette & halloumi salad with caper & lemon dressing

  • 10-12 baby courgettes, halved lengthways
  • 225g block halloumi, thinly sliced (about 16 slices)
  • 1 tbsp olive oil
  • 1 long shallot, finely chopped
  • 1 garlic clove, crushed
  • 1 red chilli, finely chopped
  • 1 lemon, zested and juiced
  • 3 tbsp olive oil
  • 2 tbsp capers

Put all the ingredients for the dressing in a bowl with 1 tablespoon of cold water and a pinch of salt. Combine and set aside.

Pour the oil over the courgettes in a large bowl. Add a little salt, and then mix.

Put the cut side of the courgettes down on a hot griddle pan. This is best done in batches. Cook for 4 to 5 minutes, until char marks appear and the meat softens, then flip and cook for another 3 minutes. Move to a shallow bowl and cover with foil to keep warm.

In the meantime, heat a large nonstick frying pan and put the halloumi in it. Wait a few minutes, until both sides are golden brown.

Put the zucchini and halloumi on a large plate or platter, and then pour the dressing on top.

Olive oil: One of the most important oils used in cooking and baking is olive oil. It gives any dish a unique flavor and can also be used for health reasons, like in your skin care routine.

The fruit of the olive tree, which grows in the Mediterranean area, is used to make olive oil. Ancient people like the Greeks, Romans, and Egyptians used it, but it wasn't popular outside of its natural habitat until recently.

Because olive oil is thought to be good for your health and well-being, there has been a rise in demand for good oils like extra virgin olive oil, which is made by slowly pressing olives without any chemicals or other additives.

Red chilies: People all over the world like red chilies. Chile is a country in South America that is known for many things, including its chili peppers.

Red chilies

The red chili is very popular and can be used in a lot of different ways, like in cooking, sauces, hot drinks, and even as a topping on pizzas.

Red chillies are usually thicker than green or yellow ones and have a reddish-brown color.

They can be eaten whole or cut into smaller pieces to add flavor, heat, or moisture to other spices and ingredients.

People often think that red chillies have to be spicy hot to be good, but that's not true at all.

Spiciness is just one of the pepper's traits.
