Dress this salad while the courgettes and halloumi are still warm. The courgettes will soak up the flavors of the caper and lemon dressing.
Ingredients
- 10-12 baby courgettes, halved lengthways
- 225g block halloumi, thinly sliced (about 16 slices)
- 1 tbsp olive oil
- 1 long shallot, finely chopped
- 1 garlic clove, crushed
- 1 red chilli, finely chopped
- 1 lemon, zested and juiced
- 3 tbsp olive oil
- 2 tbsp capers
Method
Put all the ingredients for the dressing in a bowl with 1 tablespoon of cold water and a pinch of salt. Combine and set aside.
Pour the oil over the courgettes in a large bowl. Add a little salt, and then mix.
Put the cut side of the courgettes down on a hot griddle pan. This is best done in batches. Cook for 4 to 5 minutes, until char marks appear and the meat softens, then flip and cook for another 3 minutes. Move to a shallow bowl and cover with foil to keep warm.
In the meantime, heat a large nonstick frying pan and put the halloumi in it. Wait a few minutes, until both sides are golden brown.
Put the zucchini and halloumi on a large plate or platter, and then pour the dressing on top.
