To make our broccoli, cauliflower, halloumi, and couscous dish, turn on the grill. It's a simple summer dinner that everyone can enjoy.


2 tomatoes, finely chopped
1 lemon, juiced
½ red onion, finely chopped
1 tsp cider vinegar
1 cauliflower, cut into florets, stalks cut into 5cm pieces
2 tsp dried oregano
1 broccoli, cut into florets, stalks cut into 5cm pieces
1 tsp smoked paprika
3 tsp olive oil
cooked couscous, to serve (optional)
450g halloumi, cut into 2.5cm cubes


In a bowl, mix together the tomatoes, onion, lemon juice, cider vinegar, half of the dried oregano, and 1/2 teaspoon of black pepper.

Start up the grill. Bring a pan of water to a boil and cook the broccoli stalk pieces and cauliflower florets for 3 minutes. The broccoli florets should be added in the last minute. 

Drain the vegetables, then toss them with 2 tsp of the olive oil, the rest of the oregano, and the paprika.

When the coals are gray, put the pieces of vegetables on the grill, let them cook for 2 minutes, and then move them to a cooler part of the grill. Move the vegetables around so they don't burn.

Put the halloumi on the grill and turn it over after 1 minute. Keep doing this until every side is browned.

Put all the vegetables and halloumi in a bowl, drizzle with the rest of the olive oil, season, and serve right away with couscous.

 In Mediterranean cooking, olive oil can be used as a cooking oil, a salad dressing, or a main dish.

Due to its monounsaturated fat content, olive oil can help prevent heart disease.

 It can also lower cholesterol levels and improve triglycerides. 

Olive oil is also thought to slow down the aging process by protecting the skin from the sun and making wrinkles and skin cancer less likely.
